Fajitas

¡Ándale! ¡Ya llegaron las fajitas chingonas! Learn how to prepare the classic Mexican with love and boleros. A perfect and nutritious meal rather fast to make both at lunchtime or dinner. An extra touch of coolness because they roll.

(Quantities are indicative for a serving of 2 people)

Ingredients

  • 2 chicken breasts
  • 1 pepper (regardless colour)
  • 1 red onion
  • 4 or 6 tortilla wraps
  • 1 avocado
  • 2 garlic cloves
  • 1 tablespoon of hot paprika
  • 1 tablespoon of cumin
  • Pepper

Steps

1. Gather all the necessary ingredients and play Luis Miguel for background music

2. Start by dicing the chicken breasts, the pepper and the red onion

3. Then, we will prepare the marinade with the spices. Grab a bowl and mix 1 tablespoon of hot paprika, 1 tablespoon of cumin and pepper. In addition to this, grate 2 garlic cloves using the small holes and add to the mixture.

4. Stir well the marinade and add into the bowl the dice of chicken, pepper and onion. Mix well until everything is covered evenly. Let this sit for at least 10 minutes.

5. In the meantime, pre-heat a frying pan or wok at a high temperature

6. When hot, pour a small quantity of olive oil to cover the pan and add the mixture of the ingredients in whilst stirring well

7. Keep on stirring until food is cooked properly. A good guidance to see this will be the chicken, where you can check if it is still raw or ready to take out.

8. Once ready, remove the pan from heat and place ingredients in a big bowl

9. Optional step: Grab 1 avocado, peel it and smash it to make a purée. Take a tortilla wrap and either spread the avocado purée on one of the sides.

10. Just on top of the avocado purée (or on a plain one if you did not include avocado) serve a couple of spoonfuls of the prepared mixture for the fajitas. Align the ingredients in a straight line from one side of the wrap to the other.

11. Next, with the spare 'flaps', fold inwards in order to form a roll and tighten for better grip when grabbing them to eat

12. Finally, once finished, grab your fajitas and calmly sit down alone or in company to enjoy them whilst watching Narcos on Netflix for the final Mexican touch

I had to include this recipe since it is one of the meals we most make at home. It surely is a great balance of healthy and tasty. Once you get the grasp of it, it is super easy and fast to make since it mostly consists in chopping up ingredients and spicing it up. Spices are the perfect choice to add flavour to a meal without adding other additives such as salt or sugar. In addition to this, adding garlic cloves also helps to maximise the taste.
